I decided to have a go at making some chocolates as Christmas presents this year. I made 3 fillings, chocolate fudge, white chocolate truffle and milk chocolate truffle. Each of these I then balled up and rolled in tempered melted chocolate.
The outcome was pretty good. The milk chocolate truffles, coated in white chocolate and sprinkled with cocoa powder were the best ones. The white chocolate truffles proved to be quite sweet, which may just be a result of using cheap white chocolate. I also discovered that the mix for white chocolate truffles is 3 parts chocolate to 1 part double cream. I had started off using 2 parts chocolate to 1 part cream which was the mix I had read about, but this is only for dark chocolate. I had to heat the mixture up again and add more chocolate to fix it as it was far too soft.
To present the chocolates, I found some small boxes on ebay and used a sandwich bag to keep the chocolates fresh. I then created a simple logo to brand my chocolates. Pretty pleased with the outcome, but will leave the white chocolate truffles in future and may try some different flavours such as mint or orange.
